This classic Greek cheese, usually made with sheep or goats milk, is made with farm fresh cow's milk here at Argyle Cheese Farmer. The cheese is salted, cut into blocks and sealed in bags that creates a brine for the cheese to age in. As it ages the cheese takes on a sharper taste, but can be left in the bag for as long as it holds its seal.
